PROCESSING
The harvest is made between mid-october to mid-december, manually and/or with tools. The product is stored in plastic crates and within the same day, they are brought in a olive oil mill.
Here the olives are washed, pressed, kneaded and then takes place a cold extraction of the oil through a continuous cycle plants.
This process guarantees low acidity of the oil, ensure the presence of a high quantity of antioxidants such as phenols and polyphenols and, last but not least, keep the oil's taste and aroma unaltered.
