Features

To say "San Marzano" is for italians to say "pomodoro" (tomato), and "salsa" (tomato sauce) or "pelati" (peeled tomato).
An almost iconic term always associated with "pasta", "spaghetti" or a lot of recipes.

San Marzano's tomato grows in fertile soils and mediterraneum climate of Campania region.
The knowledge and experience of farmers over more than a century, have developed and improved a product known all around the world.
In 1996 the tomato in form of "pelato" ("peeled") and "pelato a filetti" ("fillets of peeled tomato") was awarded the P.D.O. of European Union.
The San Marzano has a sweet-and-sour flavour, the shape is elongated with a firm pulp with few seeds, bright red skin together with its physical-chemical characteristics make it really unmistakable.

How is it produced?

The soils where the cultivation takes place - in morphological terms - are mostly covered by pyroclastic material of volcanic origin.
The Agro Sarnese-nocerino areas enjoy a mediterraneum climate with the good influence of the sea.
The summer is hot with little rain, but the other seasons are quite rainy and good humidity, but with temperatures rarely dropping below 0°C.
The soils are soft, deep, with fairly organic substances and a high quantities of phosphorus and potassium.


CULTIVATION TECHNIQUE

The transplanting is carried out mainly in April.
Tomato plantings are in rows with vertical cultivation with suitable stakes a distance of about 50 cm (minimum 40 cm) within plants, and about 1.5 meter (1.10 m minimum) between rows.
Green pruning and topping are allowed, as the cultivation in protected environments for preserving crops from attack by pests and insects.

HARVEST

The harvest takes place between July 15th and October 15th.




Production area

San Marzano's tomato is produced in the Agro Sarnese-nocerino in the territory of municipalities inside provinces of Salerno, Napoli, Avellino (Campania region).


The Corsortium was established in 1999 with the aim to promote and enhance the production and safeguard of San Marzano PDO:
In 1996, it was awarded the European P.D.O. denomination (Protected Designation of Origin).
